Featured Recipe: Whole Wheat Cinnamon Raisin Bread

Combine 2 cups Arrowhead Mills Unbleached White Flour and 2 cups of Arrowhead Mills Whole Wheat flour, ¼ cup of nonfat dry milk, 1 large beaten egg, 2 tbsp. of canola oil, 3 tbsp. of honey, 2 tsp. of salt, 1-1/2 tsp. of instant dry yeast, and 1-1/4 cup warm water in the bowl of a stand mixer filled with the dough hook. Mix 3 minutes on lowest setting, then set to next highest setting for 5 more minutes. Dough should be soft and sticky. Let rise. Transfer dough to large bowl coated with cooking spray, cover tightly with plastic wrap and let rise at room temperature until dough has nearly doubled in size. Approximately 1.5 hours. Fold dough on floured work surface. Mist two 9x5 inch loaf pans with cooking spray. Divide dough in half, roll out each half into 8-inch square. Brush each square with canola oil, then sprinkle with 1 tbsp. cinnamon, 1/3 cup of brown sugar, and 2/3 cup of golden raisins. Cover tightly and let rise at room temperature until dough fills pans and springs back when touched. Approximately 1.5 hours. Brush loaves lightly with canola oil and bake at 375F. Bake until golden brown. Remove from pan and let cool.
